ANALISIS KADAR PROTEIN DAN VITAMIN C DALAM TAHU KEDELAI HITAM (Glycine soja (L.) Merrill)DAN KEDELAI KUNING (Glycine max (L.) Merrill) DENGAN METODE KJELDAHL DAN TITRASI IODIMETRI

Abstract


Telah dilakukan analisis kadar protein dan vitamin C dalam kedelai hitam (Glycine soja (L.) Merrill) dan kedelai kuning (Glycine max (L.) juga tahu dengan beberapa pengerjaan yang berbeda dengan rata-rata perbedaan kadar yang didapat selisih 1% lebih besar kadar kedelai hitam (Glycine soja (L.) Merrill) dibanding kedelai kuning (Glycine max (L.) Merrill) untuk persentasi kadar protein. Sedang untuk kadar vitamin C selisihnyaa tidak mencapai angka 1% namun tetap saja kadar tertinggi dimiliki oleh kedelai hitam (Glycine soja (L.) Merrill) maupun produk olahan tahunya. Pada Uji hedonik yang dilakukan terhadap tahu goreng kedelai hitam (Glycine soja (L.) Merrill) dan tahu goreng kedelai kuning (Glycine max (L.) didapatkan persentasi kesukaan para panelis sebesar 80,66% dan 6733%.

ABSTRACT
